Ingredients
- 1 tsp paprika
- 1 tbsp olive oil
- 1 small onions
- 2 small bell peppers
- 9 slices bacon
- 8 eggs (large)
- 2 oz crumbled goat cheese
- 2 oz milk (nonfat)
Directions
- Sauté vegetables in olive oil. Add chopped bacon and paprika.
- Whisk eggs with milk.
- Divide vegetable mixture into muffin tins and add 1 tsp goat cheese to each.
- Pour in beaten eggs.
- Bake at 325°F in a water bath covered with a sheet pan for 25 minutes or until set.
