  • 12 large eggs
  • 1/2 cup parmesan cheese, shredded
  • 1 dash pepper
  • 1 dash salt
  • 3/4 cup spring onion, chopped
  • 8 fl oz half and half
  • 3/4 cup mozzarella cheese, shredded

Directions

  • Preheat oven to 400 °F (200 °C). Grease mini muffins tins
  • In a bowl combine all ingredients
  • Fill the muffin tins using a spoon as the cheese and the onion will all run to the bottom.
  • Cook for 20 minutes or until golden brown.
