- 3 1/3 cups liquid egg whites
- 5 oz baby spinach
- 1/2 cup pure almond milk - original
- 3 oz crumbled goat cheese
- 1 medium red bell pepper
- 8 oz, raw, yields mushrooms
Directions
- Whisk liquid egg whites and almond milk together.
- Wash vegetables. Slice mushrooms and bell pepper.
- Spray a pan with cooking spray. Mix all ingredients and pour in the pan.
- Bake at pre-heated oven at 400°F for 30 minutes.
