Ingredients

  • 2 lbs eggplant
  • 1 tbsp sea salt
  • 2 medium onions
  • 4 tbsps olive oil
  • 6 large eggs
  • 2 cloves garlic
  • 1 lemon yields lemon juice
  • 1/4 tsp saffron

Directions

  • Mix eggplant with salt and let stand for 1 hour. Rinse well and dry.
  • Sauté eggplant in oil in small batches. Mash eggplant with a potato masher.
  • Sauté onions until golden and add to eggplant.
  • Beat eggs with other ingredients. Add to eggplant mixture.
  • Pour into oiled 9" baking pan and bake for 30 minutes at 375 °F (190 °C).
