A very simple salad with great crunchiness and flavor.

Ingredients

  • 1 dash black pepper, freshly ground
  • 1 dash kosher salt
  • 1 tbsp red wine vinegar
  • 1 tbsp olive oil
  • 1/3 cup cranberries
  • 2 orange
  • 1 bulb fennel

Directions

  • Wash and thinly slice fennel bulb and put in bowl.
  • Peel and section oranges. Cut sections in half and add to fennel.
  • Sprinkle a pinch of kosher salt and fresh ground black pepper over salad.
  • Add red wine vinegar and olive oil, toss salad.
  • Add cranberries toss again and serve.
