  • 1 cup whole ground flax
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 cup chopped walnuts
  • 2/3 cup water
  • 2 tbsps olive oil
  • 2 servings 1 packet sweetner
  • 2 large eggs
  • 1 tbsp vanilla

Directions

  • Ground 1 cup of flax seeds.
  • In bowl #1: add ground flax, baking soda and baking powder. Mix well.
  • In bowl #2: add eggs, water, oil, sweetener (lik Stevia or Splenda) and vanilla. Mix well.
  • Add walnuts to dry ingredients.
  • Grease a microwave casserole dish - 8" diameter.
  • Mix both dry and wet ingredients together. Pour into greased microwave casserole dish.
  • Microwave on high for 5 minutes.
  • Turn upside down on to a baking rack. Cool. Turn over and serve slices. (Great with cream cheese & berries).
