  • 1 cup pinto beans
  • 1/2 cup chopped onion
  • 2 small whole tomatoes
  • 6 slices Canadian bacon
  • 3 sprigs cilantro
  • 2 cloves garlic
  • 1 tbsp extra virgin olive oil
  • 1 tsp sea salt

Directions

  • Place 1 cup of dry beans in large pot and add 6 cups of water.
  • Dice onion and add to the pot. Put over medium heat for 3 hours.
  • When beans are near done, dice Canadian bacon, garlic and sauté in olive oil in a large skillet.
  • Once garlic and bacon start to brown, add remaining ingredients and stir fry until tomatoes start to break down.
  • Add ingredients from skillet to bean pot.
  • Cook together for at least another 30 minutes or until beans are entirely cooked.
