Ingredients

  • 1/4 cup cilantro (coriander)
  • 1 medium whole tomatoes
  • 8 oz sharp cheddar cheese
  • 2 tbsps heavy cream
  • 16 oz pork sausage
  • 10 large eggs
  • 2 tsp stone ground mustard

Directions

  • Brown sausage and drain. Put in casserole dish.
  • Top with tomato, cheese, cilantro.
  • Separate bowl beat eggs, cream, mustard.
  • Pour over casserole. Bake 30 min at 350°F.
