- 16 oz cauliflower
- 1/2 cup shredded cheddar cheese
- 1/4 cup no carb mayonnaise
- 1 tbsp apple cider vinegar
- 2 tbsps red onion, chopped
- 1 tsp yellow mustard
Directions
- Break cauliflower into large pieces. In a shallow microwave safe dish, place cauliflower in a single layer.
- Add 2 tablespoons of water. Cover with plastic wrap and cook on high in microwave for 4 minutes.
- While cauliflower is cooking, mix no carb mayonnaise, mustard, chopped red onion, and cheese in a small bowl.
- Uncover bowl carefully and drain water. Sprinkle cauliflower with vinegar.
- Smooth cheese mixture on top of cauliflower and cook uncovered for an additional 3 minutes or until tender.
