Ingredients

  • 2 large whole tomatoes
  • 6 oz mozzarella cheese, skim
  • 1/3 cup zesty italian dressing, fat free
  • 6 slices, thin red onion
  • 1/2 cup slices cucumber
  • 6 leaves basil

Directions

  • Cut both large tomatoes into 6 slices of tomato each.
  • Place the 6 of the tomato slices separately on a plate and top each with a cheese slice. Drizzle with half of the Italian dressing.
  • Then top each one with an onion slice, 2 cucumber slices and the second tomato slice.
  • Drizzle the rest of the dressing over the 6 stackers and top each one with a basil leaf.
