Ingredients

  • 2 tbsp red wine vinegar
  • 1 bay leaf
  • 1 tsp leaves oregano
  • 1 dash pepper
  • 6 cups vegetable stock
  • 1 medium carrot
  • 3 cloves garlic
  • 1 medium onion
  • 1 cup lentils

Directions

  • Chop the carrot, onion and garlic quite small and add to a big soup pan.
  • Add all the other ingredients except the vinegar and pepper.
  • Bring to a boil for about ten minutes and then let simmer for about 80 - 90 minutes, stirring occasionally but more often towards the end.
  • Turn off the heat and stir in the red wine vinegar and season with pepper. I find it doesn't need salt thanks to the tasty stock but feel free to add a pinch.
  • Serve hot.
