Ingredients
- 1/4 tsp black pepper
- 4 wedges yield lemon juice
- 1 cup crumbled feta
- 1 1/2 lbs shrimp
- 1/2 cup parsley
- 2 cups diced tomatoes
- 5 cloves garlic
- 1 tsp olive oil
Directions
- Pre-heat oven to 400 °F (200 °C).
- Heat oil in a large Dutch oven over medium heat.
- Add garlic, sauté 30 seconds. Add tomatoes and 1/4 cup parsley.
- Reduce heat, simmer 10 minutes. Add shrimp, cook 5 minutes.
- Pour shrimp mixture into a 13 x 9" baking dish; sprinkle with cheese.
- Bake at 400 °F for 10 minutes. Sprinkle remaining parsley, lemon juice and pepper.
- Serve over your favorite pasta.
