Ingredients

  • 1/4 tsp black pepper
  • 4 wedges yield lemon juice
  • 1 cup crumbled feta
  • 1 1/2 lbs shrimp
  • 1/2 cup parsley
  • 2 cups diced tomatoes
  • 5 cloves garlic
  • 1 tsp olive oil

Directions

  • Pre-heat oven to 400 °F (200 °C).
  • Heat oil in a large Dutch oven over medium heat.
  • Add garlic, sauté 30 seconds. Add tomatoes and 1/4 cup parsley.
  • Reduce heat, simmer 10 minutes. Add shrimp, cook 5 minutes.
  • Pour shrimp mixture into a 13 x 9" baking dish; sprinkle with cheese.
  • Bake at 400 °F for 10 minutes. Sprinkle remaining parsley, lemon juice and pepper.
  • Serve over your favorite pasta.
