  • 1 dash pepper
  • 1 dash salt
  • 1 tbsp olive oil
  • 1/2 cup cubed avocado
  • 1/4 tbsp lemon juice
  • 1 tsp chopped chives
  • 1 cup pared, chopped cucumber
  • 1/2 cup chopped spring onion
  • 1 cup chopped sweet peppers, mixed colors
  • 1/2 cup broad beans
  • 1 cup cooked brown rice

Directions

  • Simply mix together the rice, peppers, avocado, beans, two-thirds of the spring onions (scallions) and cucumber.
  • Make the dressing using the oil, lemon juice, remaining spring onion, chives, salt and pepper.
  • Drizzle dressing over the salad.
