- 1 cup cooked brown rice
- 1 cup chopped sweet peppers, mixed colors
- 1/2 cup broad beans
- 1 cup pared, chopped cucumber
- 1/2 cup cubed avocado
- 1 tbsp olive oil
- 1/4 tbsp lemon juice
- 1/2 cup chopped spring onion
- 1 tsp chopped chives
- 1 dash pepper
- 1 dash salt
Directions
- Simply mix together the rice, peppers, avocado, beans, two-thirds of the spring onions (scallions) and cucumber.
- Make the dressing using the oil, lemon juice, remaining spring onion, chives, salt and pepper.
- Drizzle dressing over the salad.
