Ingredients

  • 2 tbsps unsalted butter
  • 3 tbsps drained capers
  • 1 tbsp olive oil
  • 2 cloves garlic
  • 3 fl oz dry white wine
  • Atlantic and Pacific Halibut
  • 1/4 cup flour

Directions

  • Heat the oil and butter in a large skillet over medium-high heat.
  • Season halibut pieces with salt and pepper and dredge in flour.
  • Fry the halibut until golden brown on both sides and fish flakes easily, about 6-7 minutes total.
  • Remove from pan and transfer to dinner plates keeping warm.
  • Return pan to heat; pour wine into the hot empty skillet and use a spatula to scrape any browned bits from the bottom.
  • Let the wine reduce by half then stir in the garlic and capers.
  • Let sauce simmer for a minute to blend flavors and then pour sauce over fish and serve.
