  • 1 tbsp margarine
  • 2 oz queso cheese
  • 10 oz kielbasa, chopped
  • 2 small tomatoes, chopped
  • 1 tsp crumbled bay leaf
  • 44 oz black beans
  • 1 1/2 tbsps cumin
  • 5 tsps oregano leaves
  • 4 tsps garlic, chopped
  • 1 medium onion, chopped
  • 2 tbsps green onion, chopped
  • 1 medium green pepper, chopped
  • 2 cups water

Directions

  • Puree 15 oz of black beans with one tomato, queso cheese, bay leaf and 1/2 cup of water. Set aside.
  • In a pot, melt margarine adding in onion, green peppers, garlic and one tomato.
  • After the onions have caramelized and green peppers have started to tender, add in kielbasa, oregano, and cumin.
  • After kielbasa is cooked, stir in pureed beans and green onion.
  • Bring mixture to a simmer and add remaining black beans and water.
