  • 1/4 tsp salt
  • 1/4 cup coconut flour
  • 4 tbsps erythritol
  • 3 large eggs
  • 2 tbsps butter
  • 1/4 tsp vanilla extract
  • 1/4 cup pecans, chopped
  • 3 tbsps coconut milk
  • 1/4 tsp baking powder

Directions

  • Blend together eggs, butter, coconut milk, honey, salt and vanilla.
  • Combine coconut flour with baking powder and thoroughly mix into batter until there are no lumps.
  • Fold in nuts.
  • Pour batter into muffin cups.
  • Bake at 400° F (200° C) for 15 minutes.
