- 4 tbsps erythritol
- 1/4 cup pecans, chopped
- 1/4 tsp baking powder
- 3 large eggs
- 1/4 tsp vanilla extract
- 1/4 tsp salt
- 3 tbsps coconut milk
- 2 tbsps butter
- 1/4 cup coconut flour
Directions
- Blend together eggs, butter, coconut milk, honey, salt and vanilla.
- Combine coconut flour with baking powder and thoroughly mix into batter until there are no lumps.
- Fold in nuts.
- Pour batter into muffin cups.
- Bake at 400° F (200° C) for 15 minutes.
