Ingredients
- 2 tbsps soy sauce
- 1 1/2 stir fry mixed vegetables
- 3 tbsps white wine vinegar
- 1 1/2 tsps sambal oelek
- 1/4 tsp xanthan gum
- 3 cups water
- 2 tsps chicken base
- 4 oz boneless pork loin, cooked
- 1 large egg
- 4 oz portabella mushrooms, sliced
Directions
- Mix chicken base with xanthan gum. Add water and soy sauce and mix well.
- Add remaining ingredients except for egg. Bring to a boil and reduce to a simmer.
- In a small bowl, scramble the egg and pour it into the soup while stirring in one direction.
- Let simmer for a few minutes more and enjoy.
