Huevos Rancheros (No Tortilla)

This is a great diet version of this yummy Mexican breakfast.

Ingredients

  • 3 large egg whites
  • 2 tbsps salsa
  • 2 tbsps black beans
  • 2 oz avocados

Directions

  • Separate yolks from egg whites.
  • Fry egg whites in a small sauce pan using pan spray on medium heat.
  • Once the top of the egg begins to firm, flip over and fry the other side about 3 minutes.
  • Once egg is cooked and slightly golden on both sides remove to a plate.
  • Place black beans in same pan and heat.
  • Place beans on egg tortilla.
  • Place salsa on top of beans and top with fresh avocado or guacamole.
  • Note: avocado is substituted for oil which brings down the calories.
