Ingredients

  • 1 cup red lentils
  • 1 medium onion, chopped
  • 2 cloves garlic, crushed
  • 2 tsps cumin seeds
  • 2 tsps turmeric
  • 10 medium mushrooms, chopped
  • 1 medium green sweet peppers
  • 4 cups chicken stock
  • 1 tsp olive oil
  • 1 tsp curry powder

Directions

  • Cover lentils with boiling water and allow to stand for 15 minutes.
  • Heat olive oil in a pan and cook onions and garlic for 2 minutes.
  • Add cumin seeds, turmeric and curry powder. Cook for 2 minutes until fragrant.
  • Add mushrooms and green pepper. Stirfry for a further 2 minutes.
  • Add stock and lentils. Cook over medium heat for 35-45 minutes, or until dhal thickens.
  • Stir frequently to avoid sticking.
