Ingredients

  • 1 tsp ground basil
  • 1 tsp ground oregano
  • 1 tsp ground thyme
  • 2 tbsps olive oil
  • 2 cups shredded cabbage
  • 64 oz chicken broth
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 5 cloves garlic, minced
  • 1 cup chopped onions
  • 3 medium whole tomatoes, chopped
  • 1 cup brown rice
  • 16 oz black beans, rinsed and drained
  • 16 oz white beans, rinsed and drained

Directions

  • Heat oil in large pot over medium-high heat.
  • Add onions, carrots and celery. Cook 5-7 minutes, stirring occasionally. Add garlic and cook for 1 minute.
  • Add tomatoes, broth, oregano, basil and thyme and bring to a boil. Add cabbage and rice and reduce heat to a simmer.
  • Cook 30-40 minutes or until rice is tender. Stir in beans and simmer for 5 minutes or until beans are heated through.
