Italian Zucchini

A nice lighter side dish to grilled items. Can even be tossed with pasta.

Ingredients

  • 1 package frozen zucchini, sliced
  • 1/2 large onion, sliced
  • 14 1/2 oz stewed tomatoes (italian style)
  • 1/2 tsp garlic powder
  • 1/2 tbsp pepper
  • 1/2 oz light butter (1 tbsp)

Directions

  • In a medium saucepan, add all ingredients except butter.
  • Simmer on low-medium heat until onions and zucchini are cooked but firmer in texture. Approximately 15 minutes but don't over cook.
  • When ready to serve mix in the butter.
  • Serve in small bowls because you want to get all the juice too which has great flavor!
