- 2 1/2 cups water
- 1 leek
- 1 cup kale, chopped
- 1 1/2 medium russet potatoes
Directions
- Bring 2 1/2 cups of water to a boil, add in a pinch of salt to taste.
- Chop all vegetables into chunks, wash and place them into the pot.
- Boil the vegetables till they become tender and can easily be poked with a fork.
- Place half a cup of water onto a blender and add your cooked vegetables then blend on a medium speed until smooth. Add salt and pepper to taste.
- Serve and enjoy.
