  • 1 cup kale, chopped
  • 1 leek
  • 2 1/2 cups water
  • 1 1/2 medium russet potatoes

Directions

  • Bring 2 1/2 cups of water to a boil, add in a pinch of salt to taste.
  • Chop all vegetables into chunks, wash and place them into the pot.
  • Boil the vegetables till they become tender and can easily be poked with a fork.
  • Place half a cup of water onto a blender and add your cooked vegetables then blend on a medium speed until smooth. Add salt and pepper to taste.
  • Serve and enjoy.
