Ingredients

  • 3 cups kale, chopped
  • 2 medium red potatoes
  • 1 cup celery, chopped
  • 5 cloves garlic
  • 5 cups chicken stock
  • 1 cup carrots, chopped
  • 1 medium red onion
  • 2 tsps Italian seasoning
  • 1 tbsp coconut oil

Directions

  • Saute onion and garlic in coconut oil for 5 minutes
  • Add chicken stock, carrots and celery and bring to a boil.
  • Add potatoes and simmer for 15 minutes.
  • Add Italian seasoning and kale. Cook for 5-10 more minutes.
