Ingredients

  • 700 g balsam-pear (bitter gourd, pods)
  • 150 g onions
  • 2 tbsps sunflower oil
  • 1/4 tsp turmeric (ground)
  • 1 1/2 tsps chili powder
  • 1/2 tsp himalayan pink salt
  • 1 tsp coriander seed
  • 5 cloves garlic
  • 1/2 cup water

Directions

  • Cut pods into half lengthwise and remove inner core with seeds. Discard the core and seeds.
  • Cut into pieces and soak in water for 30 minutes. Drain and wash thoroughly.
  • In a pan with oil, put coriander seeds, diced onions, and garlic. Sauté until translucent.
  • Add bitter gourd, salt, turmeric, and chili powder. Cook on medium heat with lid on for 10 minutes.
  • Pour water, close lid, and cook for 5 minutes or until done.
