Ingredients

  • 2 cups almond flour
  • 1/2 cup Irish butter
  • 1 large egg
  • 1 tsp pure vanilla extract
  • 1 tsp ground cinnamon
  • 40-64 drops liquid stevia

Directions

  • Preheat oven to 300 °F (150 °C).
  • Add all liquid ingredients to large mixing bowl and mix well.
  • Add dry ingredients to wet ingredients and mix until very well combined.
  • Roll dough into 15 evenly sized balls and place onto well greased baking sheet.
  • Place into the oven for 5 minutes and remove.
  • Press dough with fork to create cookie shape.
  • Place back into the oven for 18-20 minutes to finish baking.
  • Remove from baking and allow to cool for 5 minutes.
