Ingredients

  • 2 cups water
  • 4 cups chicken broth
  • 1/3 cup green peas
  • 1 cup chopped carrots
  • 2 cups chopped broccoli
  • 2 cups cauliflower
  • 3 cloves garlic
  • 2 leek
  • 1 cup pieces or slices mushrooms
  • 3 tbsps butter
  • 2 tbsps olive oil
  • 1/2 cup 1% milk
  • 1/2 cup sour cream

Directions

  • Clean all vegetables and slice leeks into 1" to 1/2" pieces. Chop broccoli and cauliflower. Finely chop garlic cloves.
  • Heat olive oil and butter in a large stock pot, then saute leeks, garlic, broccoli, cauliflower and carrots for 10 minutes.
  • Add chicken (or vegetable) broth, plus 2 cups of water to the pot. Add 1/2 cup each of sour cream and 1% milk. Puree soup with a blender or mixer and salt and pepper to taste. Enjoy!!!
  • Bring to a boil, then simmer for 45 minutes.
