- 3 tbsps almond slivers
- 1/4 cup dried cranberries
- 1/3 cup chopped red onion
- 4 cups chopped broccoli
- 1/4 tsp fresh grated ginger
- 1/4 lemon yields lemon juice
- 1/4 tsp shredded lemon peel
- 2 tbsp plain green yogurt
- 3 tbsps light mayonnaise or salad dressing
Directions
- In a large bowl, stir together mayonnaise, yogurt, lemon peel, lemon juice and ginger.
- Add broccoli, red onion and cranberries. Toss to coat.
- Cover and chill for 1 to 24 hours. Just before serving, sprinkle with almond slivers.
