  • 1/2 tsp coarse kosher salt
  • 2 tsps baking powder
  • 245 g light nonfat yogurt - vanilla
  • 2 large eggs
  • 243 g all-purpose flour
  • 3/4 cup butter (salted)
  • 1 tbsp vanilla extract
  • 2 tbsps lemon peel
  • 2 tbsps ground flaxseed seeds
  • 1/2 tsp baking soda
  • 1 cup granulated sugar

Directions

  • Cream butter until light and fluffy.
  • Add lemon zest and sugar, and beat for 4 minutes.
  • Add vanilla extract and eggs one at a time.
  • In a separate bowl, sift and whisk other dry ingredients.
  • Slowly combine the two mixtures, along with yogurt.
  • Preheat oven to 425°F.
  • Lightly grease muffin tins and fill each 3/4 full.
  • Bake for 5 minutes at 425°F, then drop down to 400°F and continue baking for another 15 minutes until the center have set.
