Ingredients

  • 3 tbsps crushed black peppercorns
  • 1 tsp rosemary
  • 2 tbsps grapeseed oil
  • 2/3 cup lemon juice
  • 16 oz chicken breast meat

Directions

  • Combine all ingredients (except the chicken) for the marinade.
  • Pour over the chicken and marinate in the refrigerator for at least 3 hours, or overnight.
  • Roast chicken in a 425 °F (210 °C) oven for 15 minutes per pound. Do not open oven or baste chicken during roasting.
  • If chicken is to be grilled, grill for approximately 20 minutes, turning once.
