  • 1 cup slices carrot
  • 1 cup chopped broccoli
  • 1 cup cauliflower
  • 1 stalk large celery
  • 1 cup green beans
  • 1 cup lentils
  • 9 medium mushrooms
  • 1 tsp salt

Directions

  • Put all vegetables in a large pot. (Remember you will need to add lentils later so make sure it is large enough.)
  • Add enough water to cover the vegetables, and season with salt and any other spices you enjoy like onion powder, garlic powder or cayenne pepper.
  • Cook the vegetables until they are tender and add the lentils.
  • It should only take about 8-10 minutes of simmering to soften the lentils and cook all the flavors together.
  • Make sure to add water as it cooks out, or you could scorch your vegetables.
