Ingredients

  • 1 tbsp cumin
  • 3 tbsps curry powder
  • 1 tbsp pepper
  • 1 tsp salt
  • 2 tbsps olive oil
  • 8 oz lean pork loin roast
  • 1/4 cup strips or slices carrots
  • 1 tsp ginger
  • 1/2 cup chopped onions
  • 2 medium whole tomatoes
  • 16 oz lentils

Directions

  • Rinse lentils in cold water. Set aside.
  • Dice onions and tomatoes. Slice a carrot into small strips, or buy "matchstick" carrots, use a 1/4 cup or more to your taste. Set aside.
  • Cut leftover pork loin into small pieces. Approximately 8 ounces. Set aside.
  • Sauté onions in olive oil until soft. Add tomatoes and carrots. Add listed spices, measure to your own taste. Sauté all ingredients for five minutes.
  • Add pork pieces. Add enough cold water to cover.
  • Bring to a boil. Turn down and cook until lentils are tender. (You can also cook this in a pressure cooker, following the same instructions, but the cook time will be shorter.)
  • Serve alone or the side dish of your choice. Rice makes a good side dish, if your diet allows.
