Light Turkey Taco Chili

A light chili that will nevertheless fill you up with the tastiness of tacos but with way less fat.

  • 1 tsp olive oil
  • 1 large onion
  • 3 cloves garlic
  • 1 1/4 lbs ground turkey
  • 1 tbsp chili powder
  • 1 tbsp cumin
  • 2 tsps salt
  • 28 oz diced tomatoes
  • 14 1/2 oz kidney beans
  • 3/4 cup salsa

Directions

  • Heat oil, cook onion and garlic for five minutes.
  • Add turkey and spices, then cook another five minutes until turkey is no longer pink.
  • Add remaining ingredients and bring to a boil.
  • Reduce heat, simmer uncovered 10 minutes, stirring occasionally.
  • Note: this is a pretty mild recipe even when using hot salsa, so to make it a little more "oomphy" I'd recommend about a teaspoon of cayenne pepper.
