Ingredients

  • 1 tsp pepper
  • 1/4 cup butter
  • 4 oz cream cheese
  • 1 1/2 tbsps salt
  • 1/2 cup chopped onion
  • 7 cups diced red potatoes

Directions

  • In large Dutch oven, combine quartered potatoes, 1 tablespoon salt and onion; add water to cover.
  • Bring to a boil over high heat; reduce heat and simmer for 10-12 minutes or until tender. Drain well.
  • Add remaining salt, cream cheese, butter and a dash of pepper. Mash together.
