  • 2 servings shrimp
  • 2 servings scallops
  • 2 tbsps olive oil
  • 1 fl oz lemon juice
  • 1/4 cup cubed eggplant
  • 2 cloves garlic, crushed
  • 1/4 cup pieces or slices mushrooms
  • 1 tbsp green onions, chopped
  • 1/4 cup chopped zucchini
  • 1/4 cup chopped red peppers

Directions

  • Heat oil in skillet over medium-high heat.
  • Sauté vegetables for 3-4 minutes.
  • Add thawed shrimp and scallops and sauté for an additional 2-3 minutes.
  • Add garlic and green onions for the last minute.
  • Stir in lemon juice before serving.
