Mexican Style Soup

A low carb semi-spicy soup topped with grated cheese.

Ingredients

  • 4 breasts, bone and skin removed chicken
  • 1 cup chopped onion
  • 1 cup chopped bell pepper
  • 2 cans tomatoes & green chili's
  • 3/4 cup cilantro (diced)
  • 1 tsp cumin
  • 1 tsp chili powder
  • 2 cups shredded colby jack cheese
  • 8 cups chicken broth
  • 3 tbsps olive oil
  • 3 cloves garlic
  • 1 dash salt
  • 1 dash pepper

Directions

  • Use the same pot for all ingredients.
  • Dice and brown chicken in pan with olive oil.
  • Take chicken out of pan and set aside.
  • In same pan, put some of the olive oil, the onions, bell peppers and garlic. Stir until soft.
  • Add cumin and chili powder, then add diced tomatoes and green chili's (do not drain juice).
  • Add chicken broth and cilantro and bring to boil.
  • Serve hot topped with shredded cheese. Tortilla chips can be added if desired.
