  • 1/2 cup red wine vinegar
  • 1/2 cup cilantro, chopped
  • 1 medium red bell pepper
  • 1/2 tsp chili powder
  • 15 oz black beans
  • 1 medium red onion, chopped
  • 1/2 tbsp black pepper
  • 1/2 fl oz lemon juice
  • 1 fl oz lime juice
  • 1 tsp garlic
  • 1 medium green bell pepper, chopped
  • 4 oz olive oil
  • 15 oz cannellini beans
  • 15 oz kidney beans

Directions

  • In a large bowl, combine beans (rinsed and drained), bell peppers and red onion.
  • In a small bowl, whisk together olive oil, red wine vinegar, lime juice, lemon juice, cilantro, and black pepper.
  • Season to taste with garlic and chili powder.
  • Pour olive oil dressing over vegetables; mix well.
  • Chill thoroughly, and serve cold.
