- 1/3 cup chopped onions
- 1/2 tsp leaves basil (dried)
- 2 tsps classic yellow mustard
- 1 dash black pepper
- 1 tbsp apple cider vinegar
- 2 tbsps peppermint
- 1/2 tsp coarse kosher salt
- 16 oz, raw, yields cooked green string beans (from fresh, fat not added in cooking)
- 2 tsps minced garlic
- 2 tbsps extra virgin olive oil
Directions
- Make vinaigrette by mixing oil, mustard, vinegar, garlic, basil, salt, and pepper.
- Combine beans, vinaigrette, chopped mint and onions.
- Serve immediately or chill for up to 24 hours.
