  • 1 leek, chopped
  • 1/2 large onion, chopped
  • 2 stalks large celery, chopped
  • 1 clove garlic, minced
  • 2 large zucchini, sliced or chopped
  • 4 carrots, sliced or chopped
  • 15 oz green beans, drained
  • 15 oz italian style diced tomatoes
  • 1 can tomato paste
  • 64 oz chicken broth
  • 1/2 head large cabbage, chopped
  • 2 tbsps basil
  • 1 tsp leaves oregano
  • 1/2 tsp leaves thyme
  • 1 dash salt
  • 1 dash black pepper

Directions

  • Sauté celery, onion, and garlic with cooking spray (like Pam) in large stock pot.
  • Add broth (low fat or fat free) and all ingredients. Bring to boil, cover and simmer for a minimum of 1 hour.
  • Add salt and pepper to taste.
  • Note: you can add cooked chicken breast, canned chicken breast, canned shrimp or extra lean ground beef to add protein to this soup and make it a meal.
