- 4 cups almond meal flour
- 2 cups old fashioned rolled oats
- 4 tsps cinnamon
- 1 tsp nutmeg (ground)
- 2 tsps baking soda
- 1 cup pecan halves
- 1/2 cup dried cherries
- 1/2 cup chopped dates
- 6 large eggs
- 2 cups chopped zucchini
- 2 cups chopped carrots
- 3/4 cup butter
- 1 cup pure maple syrup
- 2 tsps vanilla extract
Directions
- Mix wet ingredients in a bowl. Add zucchini and carrots.
- Add remaining ingredients.
- Scoop out mixture to muffin cups and bake at pre-heated oven at 350°F for 25-30 minutes.
