  • 4 cups almond meal flour
  • 2 cups old fashioned rolled oats
  • 4 tsps cinnamon
  • 1 tsp nutmeg (ground)
  • 2 tsps baking soda
  • 1 cup pecan halves
  • 1/2 cup dried cherries
  • 1/2 cup chopped dates
  • 6 large eggs
  • 2 cups chopped zucchini
  • 2 cups chopped carrots
  • 3/4 cup butter
  • 1 cup pure maple syrup
  • 2 tsps vanilla extract

Directions

  • Mix wet ingredients in a bowl. Add zucchini and carrots.
  • Add remaining ingredients.
  • Scoop out mixture to muffin cups and bake at pre-heated oven at 350°F for 25-30 minutes.
