- 6 cups water
- 10 tsps organic coconut sugar
- 4 tbsps organic unrefined virgin coconut oil
- 2 tsps ginger (ground)
- 1 tsp cinnamon
- 1 tsp nutmeg (ground)
- 1/2 tsp black pepper
- 1 cup coconut milk unsweetened
- 1 cup organic basmati rice
Directions
- Bring water and rice to boil in a large pot. Simmer while stirring occasionally until it begins to thicken. This should take about 20 minutes.
- Add sugar, spices, and oil. Note: You may need to add an extra cup of water at this stage if the pudding is too thick.
- Continue to cook slowly while stirring as needed. When consistency is gelatinous, add coconut milk. Cook for a few more minutes to thicken.
- Transfer to a bowl then serve.
