  • 1 tsp salt
  • 1 1/2 cups unsweetened soy milk
  • 1/4 cup vegetable oil
  • 1 wedge yields lemon juice
  • 2 tsp baking powder
  • 1 cup whole wheat flour
  • 2 large eggs
  • 3 packets sweetener
  • 1 cup dry quick oats

Directions

  • In large bowl, combine the oats, flour, sweetener (like Splenda), salt and baking powder.
  • Combine the eggs, milk, oil and lemon juice; add to dry ingredients and stir just until moistened.
  • Pour batter by 1/4 cupfuls onto a lightly greased hot griddle; turn when bubbles form on top of pancakes.
  • Cook until second side is golden brown.
