Ingredients

  • 1/4 cup extra virgin olive oil
  • 1 shallot
  • 6 cloves garlic
  • 1/4 tsp ground oregano
  • 1/4 tsp crushed red pepper flakes
  • 1 3/4 cups cannellini beans
  • 16 oz cooked broccoli (fat not added in cooking)
  • 2 oz parmesan cheese (shredded)
  • 16 oz dry orecchiette

Directions

  • Cook pasta according to packaging. In a separate pan, blanch broccoli for 2-3 minutes.
  • Heat oil in skillet over medium heat. Add minced shallot and cook until softened. Stir in garlic, oregano, and pepper flakes until fragrant.
  • Add beans and cook until tender. Pour some pasta water and bring to boil.
  • Adjust heat to low then add broccoli, pasta and parmesan. Stir to incorporate. Turn off heat. Transfer to a plate then serve.
