- 1 medium zucchini
- 1/2 cup sliced squash
- 1 medium red bell pepper
- 1 large yellow bell pepper
- 16 oz asparagus
- 1 small red onion
- 3 tbsps extra virgin olive oil
- 1 tsp salt
- 1/2 tsp freshly ground black pepper
Directions
- Heat oven to 450 °F (220 °C).
- Cut vegetables into bite sized pieces.
- Place vegetables in large roasting pan. Toss with oil, salt, pepper to coat. Spread in single layer.
- Roast for 30 minutes, stirring occasionally, until lightly browned and tender.
