Ingredients

  • 3 tbsps heavy cream
  • 1 large egg
  • 2 tbsps butter
  • 1 tsp vanilla
  • 1/4 fl oz water
  • 1/4 cup, spooned into cup biscuit mix
  • 1/4 tsp baking soda
  • 1 serving 1 packet splenda

Directions

  • In a bowl, beat egg with a fork. Pour in melted butter while stirring.
  • Mix in heavy cream, vanilla and water.
  • Measure 1/4 cup baking mix (low carb if available). Pour into sifter and add baking soda and Splenda. Sift together.
  • Blend into wet ingredients with the fork. If consistency is too thick for pancakes and another tablespoon of water.
  • Spray griddle with non-stick spray or butter lightly. Place approximately 2 tablespoons of batter for each pancake.
  • Brown lightly on one side then flip and cook a few seconds more and brown as preferred.
  • Serve with sugar free syrup and butter.
