  • 1/4 cup walnuts, chopped
  • 1 1/3 cups dried cranberries
  • 1/4 cup fat free mayonnaise
  • 2 medium peaches
  • 12 oz chicken, diced
  • 18 cups spring mix
  • 1 tsp curry powder

Directions

  • Wash and coarsely chop 2 medium peaches.
  • Combine all ingredients except the spring mix, chicken and peaches into a bowl. Blend well.
  • Divide the spring mix salad greens among 4 plates.
  • Top each with 1/4 of the chicken and peaches.
