- 1 cup organic coconut sugar
- 1 large egg
- 1/2 tsp pure vanilla extract
- 1/2 cup organic peanut butter
- 1/2 cup organic salted butter
- 180 g baking and pancake mix
Directions
- Pre-heat oven at 325°F.
- Cream butter and peanut butter. Add sugar, egg, and vanilla.
- Add baking and pancake mix by sifting. Stir to incorporate.
- Scoop a tablespoon batter and place in lined baking sheet. Repeat until the batter is used up. Flatten with a fork.
- Bake for 15 minutes or until edges are light brown. Cool completely before removing from pan with a spatula.
