Ingredients

  • 4 second spray olive oil
  • 160 g coconut flour
  • 32 g powdered sugar
  • 1 tsp pure vanilla extract
  • 1/4 tsp kosher salt
  • 256 g dark chocolate baking chips
  • 2 tbsps virgin coconut oil
  • 1 tbsp sea salt
  • 3/4 cup unsweetened peanut butter

Directions

  • Line a 8" x 8" baking pan with parchment paper. Spray with cooking spray.
  • In a medium bowl, combine peanut butter, coconut flour, powdered sugar, vanilla and salt. Pour on to parchment paper in pan. Smooth top with spatula. Freeze for 30 minutes to firm up.
  • Combine chocolate chips and coconut oil in bowl. Microwave and stir every 30 seconds until a pourable liquid. Pour over peanut butter and smooth with spatula.
  • Spread sea salt and freeze for at least 2 hours.
