  • 1 medium pear
  • 1/4 cup packed brown sugar
  • 5 tsp margarine
  • 1/2 tsp almond extract
  • 1 tsp vanilla extract
  • 1 tsp salt
  • 2 1/2 tsps baking powder
  • 3 large eggs
  • 1 cup skim milk
  • 1 container light cherry yogurt
  • 1 cup sugar
  • 1 1/4 cups whole wheat flour
  • 1 cup all purpose flour

Directions

  • Pre-heat oven to 375 °F (190 °C).
  • Spray cake pan with non-stick spray and add margarine. Put in preheating oven until margarine melt.
  • Remove from oven and sprinkle brown sugar evenly over the bottom.
  • Cut thin slices of pear and arrange at bottom of cake pan.
  • Mix remainder of ingredients starting with dry and adding wet last.
  • Mix until combined and pour on top of pears in cake pan.
  • Bake 35-40 minutes, until toothpick comes out clean.
  • Let cake cool in pan 10 minutes, then invert onto cake plate.
