  • 4 lean Italian sausage links
  • 1/4 medium red onion
  • 1/2 cup sliced pepperoni
  • 2 cups shredded mozzarella cheese
  • 32 oz egg substitute
  • 4 oz mushrooms
  • 1 medium zucchini
  • 1 medium red pepper

Directions

  • Preheat oven to 400 °F (200 °C).
  • Brown the Italian sausage.
  • Slice and chop the vegetables.
  • Spread the Italian sausage on the bottom of a 9x11" baking pan. Layer the vegetables on top, then the mozzarella cheese and pepperoni. Lastly pour in the egg substitute.
  • Bake for 60 to 75 minutes until an inserted knife comes out clean.
