Ingredients

  • 1/2 cup diced tomatoes
  • 16 oz pizza sauce
  • 1 tsp leaves basil
  • 1 tsp leaves oregano
  • 1 clove garlic, minced
  • 1 medium green pepper, chopped
  • 1 medium onion, chopped
  • 2 tbsps olive oil
  • 1/3 cup dry white rice
  • 1/2 cup grated parmesan cheese
  • 4 oz shredded provolone cheese
  • 4 oz sliced pepperoni
  • 1/2 cup sliced olives
  • 1/2 cup pieces or slices mushrooms
  • 4 cups chicken broth
  • 1/4 tsp crushed red pepper

Directions

  • In large saucepan heat the olive oil.
  • Saute the onion and green pepper until softened. Stir in the garlic. Cook for a minute.
  • Add oregano, basil, crushed red pepper, rice, tomatoes, pizza sauce and broth.
  • Bring to boil. Lower heat to a simmer and cover. Cook for 20 minutes or until rice is tender.
  • Stir in the pepperoni, olives and mushrooms. Cook for another minute or two.
  • Serve the soup in individual bowls with a sprinkling of provolone and parmesan cheese.
